“alla Bolognese” beef stuffed ravioli

Preparation: 20 minutes  
Cooking: 90 minutes

Ingredients

1 medium onion, chopped
1 garlic clove, chopped
1 celery stalk, chopped
1/4 cup extra virgin olive oil
1 1/2 lb beef, veal, pork, ground
3 cans crushed italian tomatoes
1/4 cup Italian parsley
8 leaves Italian basil

Method

  1. Heat olive oil in a sauce pan (med heat)
  2. Add onion chopped coarsely & garlic (sauté 4 min)
  3. Add all 3 meats, let brown, add salt & pepper
  4. Add celery & carrots chopped and crushed tomatoes
  5. Add parsley and allow to cook for 1 1/2 to 2 hrs.
  6. Mix with cooked ravioli
  7. Just before serving add fresh basil
