Tortellini “alla Caprese” salad

Preparation: 10 minutes  
Cooking: 12 minutes


2 package cherry tomatoes
300 gr. bocconcini
20 black olives sliced
1/2 red pepper finely diced
1/2 red onion sliced
10 chives
2 tsp oregano
2 tbsp fresh Italian basil
2 tbsp extra virgin olive oil
3 tbsp white balsamique vinegar
Salt and freshly ground pepper to taste
Parmesan shavings


  1. In a large pot, bring water to a boil, add pasta. Let boil for 12 to 15 minutes.
  2. Cut bocconcini in slices
  3. Add to a mixing bowl tomatoes, cheese, pepper, olives, onion, pasta (cooled)
  4. Add oregano, fresh basil, olive oil, chives, vinegar, salt and pepper
  5. Garnish with parmesan shavings
  6. Enjoy
