Fettucini carbonara

Preparation: 10 minutes   
Cooking: 15 minutes


600 gr. fettuccini
3 Green Onions shredded
8 Proscuitto sliced thinly in strips
1 tsp Ground Pepper
1/2 cup White  Wine
1 cup 35% cream
2 beatten eggs
2 tbsp Olive oil
2 tbsp Parmeggiano


  1. Cook fettuccini in salted boiling water for 8 minutes and strain
  2. Heat olive oil in a saucepan and saute the proscuitto, onions and ground pepper until the proscuitto is crispy
  3. Deglaze with white wine and reduce to medium heat. Add the cream and let simmer.
  4. Add the fettuccini to the sauce
  5. Remove from heat and add the whipped eggs and Parmeggiano
  6. Stir, season and serve
